Tofu Koftas with Harissa Tahini

Ingredients:

Koftas:

  • 360g smoked tofu or firm tofu, crumbled
  • 2 tbsp tomato paste
  • 1 tbsp soy sauce
  • a good pinch of salt
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp ground coriander
  • 5 tbsp (chickpea) flour
  • 1 onion, sliced
  • 200g cherry tomatoes

Harissa tahini:

  • 3 tbsp tahini
  • 2 tsp harissa (or chili) paste
  • salt to taste
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup

To serve:

  • flatbread

Instructions:

  1. Knead all kofta ingredients (except the onion and cherry tomatoes) well, either in a bowl or straight on the baking tray. Shape into a log and cut into 8 or 9 koftas.
  2. Place the sliced onion and cherry tomatoes on the same tray. Drizzle everything with oil and bake in a preheated oven at 200°C for 20 minutes.
  3. Mash the tomatoes with salt and parsley after baking.
  4. Mix all harissa tahini ingredients well and add water to thin it out.
  5. Assemble everything on a flatbread and enjoy!
