Tofu Koftas with Harissa Tahini
Ingredients:
Koftas:
- 360g smoked tofu or firm tofu, crumbled
- 2 tbsp tomato paste
- 1 tbsp soy sauce
- a good pinch of salt
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp ground coriander
- 5 tbsp (chickpea) flour
- 1 onion, sliced
- 200g cherry tomatoes
Harissa tahini:
- 3 tbsp tahini
- 2 tsp harissa (or chili) paste
- salt to taste
- 1 tbsp lemon juice
- 1 tbsp maple syrup
To serve:
- flatbread
Instructions:
- Knead all kofta ingredients (except the onion and cherry tomatoes) well, either in a bowl or straight on the baking tray. Shape into a log and cut into 8 or 9 koftas.
- Place the sliced onion and cherry tomatoes on the same tray. Drizzle everything with oil and bake in a preheated oven at 200°C for 20 minutes.
- Mash the tomatoes with salt and parsley after baking.
- Mix all harissa tahini ingredients well and add water to thin it out.
- Assemble everything on a flatbread and enjoy!
